He did a great job but is unfortunately misinformed about what 'chivalry' is. In it's most basic definition it means being good at riding a horse. The idea of what chivalry was also varied depending on what the lord that the knights served believed it to be, so 'chivalry' didn't always mean being noble or gentlemanly.

George Lucas did say he borrowed influence from Knights to Samurai. So with Padawans is accurate. Young Padawans, like Obi-Wan, were trained by Yoda, and other old masters, from the time the Jedi Council discovered them, 1 to 2 years old, till they were 7 or 8 years old, then they became under an apprenticeship of a Jedi Knight, like Qui Gon.
